Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/4 cup (50g) organic cane sugar
- 1 tsp (5ml) vanilla extract
- 1 1/4 cups (155g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 4 oz (115g) dark chocolate chips (70% cocoa)
- 1 tbsp (15ml) coconut oil
- 1/4 tsp (1.25ml) peppermint extract
- 2 tbsp (15g) crushed candy canes
Instructions:
- Beat the softened butter and cane sugar together until the mixture looks pale and fluffy.
- Stir in the vanilla extract until fully incorporated.
- Gradually add the flour and salt. Mix on low speed until a soft, cohesive dough forms. Do not overmix.
- Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven to 325°F (160°C). Roll the chilled dough to 1/4 inch thickness on a floured surface.
- Cut into rectangles or festive shapes and place on a parchment-lined baking sheet.
- Bake for 15–20 minutes until the edges are barely golden but the centers remain pale. Transfer to a wire rack to cool completely.
- Microwave dark chocolate and coconut oil in 20-second bursts, stirring in between until smooth.
- Stir peppermint extract into the melted chocolate.
- Dip half of each cooled cookie into the chocolate, shaking off the excess.
- Immediately sprinkle with crushed candy canes before the chocolate sets.
