Ingredients:

  • 1 cup unsalted butter, room temperature
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil

Instructions:

  1. In a large bowl, beat the softened butter and powdered sugar until the mixture looks pale and fluffy.
  2. Stir in the vanilla extract and salt until fully incorporated.
  3. Gradually add the flour, stirring with a spatula until a soft, smooth dough forms. Do not overmix.
  4. Transfer the dough to a piping bag and pipe small swirls or mounds onto a parchment-lined baking sheet, spacing them 1 inch apart.
  5. Preheat your oven to 350°F (175°C).
  6. Bake for 10–12 minutes until the edges are just barely golden.
  7. Let the cookies rest on the pan for 5 minutes, then transfer them to a wire rack to cool completely before dipping.
  8. Place chocolate chips and coconut oil in a microwave-safe bowl and melt until smooth.
  9. Dip the cooled cookies into the melted chocolate and garnish with sprinkles or sea salt if desired.
