Ingredients:
- 1 cup unsalted butter, room temperature
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 tbsp coconut oil
Instructions:
- In a large bowl, beat the softened butter and powdered sugar until the mixture looks pale and fluffy.
- Stir in the vanilla extract and salt until fully incorporated.
- Gradually add the flour, stirring with a spatula until a soft, smooth dough forms. Do not overmix.
- Transfer the dough to a piping bag and pipe small swirls or mounds onto a parchment-lined baking sheet, spacing them 1 inch apart.
- Preheat your oven to 350°F (175°C).
- Bake for 10–12 minutes until the edges are just barely golden.
- Let the cookies rest on the pan for 5 minutes, then transfer them to a wire rack to cool completely before dipping.
- Place chocolate chips and coconut oil in a microwave-safe bowl and melt until smooth.
- Dip the cooled cookies into the melted chocolate and garnish with sprinkles or sea salt if desired.
