- 1/2 cup unsalted butter (115g)
- 3/4 cup granulated sugar (150g)
- 2 large eggs
- 2 tsp pure vanilla extract (10ml)
- 1/2 cup unsweetened cocoa powder (45g)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking powder (5g)
- 1/4 tsp salt (1.5g)
- 2 tbsp granulated sugar (25g)
- 1/2 cup powdered sugar (60g)
Instructions:
- Cream together the unsalted butter and 3/4 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is smooth and glossy.
- In a separate bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt; gradually fold the dry ingredients into the wet mixture until just combined, taking care not to overmix.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours to ensure the dough is firm and cold.
- Preheat the oven to 350°F (175°C).
- Scoop rounded tablespoons of dough. Roll each ball lightly in granulated sugar first, then roll generously in powdered sugar until heavily coated.
- Place cookies on baking sheets lined with parchment paper and bake for approximately 10 minutes until the edges are set but the centers remain fudgy.
