Ingredients:

  • 1/2 cup unsalted butter (115g)
  • 3/4 cup granulated sugar (150g)
  • 2 large eggs
  • 2 tsp pure vanilla extract (10ml)
  • 1/2 cup unsweetened cocoa powder (45g)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking powder (5g)
  • 1/4 tsp salt (1.5g)
  • 2 tbsp granulated sugar (25g)
  • 1/2 cup powdered sugar (60g)

Instructions:

  1. Cream together the unsalted butter and 3/4 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is smooth and glossy.
  2. In a separate bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt; gradually fold the dry ingredients into the wet mixture until just combined, taking care not to overmix.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to ensure the dough is firm and cold.
  4. Preheat the oven to 350°F (175°C).
  5. Scoop rounded tablespoons of dough. Roll each ball lightly in granulated sugar first, then roll generously in powdered sugar until heavily coated.
  6. Place cookies on baking sheets lined with parchment paper and bake for approximately 10 minutes until the edges are set but the centers remain fudgy.
