Ingredients:
- 1.5 lbs chicken breast, sliced into 1-inch strips
- 2 tbsp Olive oil
- 1 tbsp Smoked paprika
- 1 tsp Cumin
- 1 tsp Chili powder
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 Red bell pepper, sliced into thin strips
- 1 Green bell pepper, sliced into thin strips
- 1 Large yellow onion, sliced into half-moons
- 4 oz Cream cheese, softened and cubed
- 1/4 cup Diced green chilies (canned)
- 1.5 cups Shredded Monterey Jack cheese
Instructions:
- Preheat your oven to 400°F (200°C). In a large bowl, toss the chicken strips with olive oil and the spice blend (paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper). Let it sit for 5 minutes.
- Place the seasoned chicken in the center of a 9x13 inch baking dish. Arrange the sliced bell peppers and onions around the edges of the pan. Dot the top of the chicken with softened cream cheese cubes and green chilies.
- Bake in the preheated oven for 15 minutes until the chicken is nearly cooked through and vegetables have softened.
- Remove the dish from the oven and top with shredded Monterey Jack cheese. Switch the oven to 'Broil' and return the dish for 3-5 minutes until the cheese is bubbling and golden-brown.
