Ingredients:
- 2 tbsp unsalted butter
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 4 cups broccoli florets, chopped small
- 4 cups cauliflower florets, chopped small
- 6 cups low-sodium vegetable broth
- 1 medium gold potato, peeled and cubed
- 1/2 cup heavy cream
- 1 tbsp fresh lemon juice
Instructions:
- Melt butter over medium heat in a large pot. Add the diced onion and sauté for 5-7 minutes until translucent.
- Stir in the minced garlic and cook for another 60 seconds until fragrant, ensuring the garlic does not brown.
- Add the cauliflower, potato, and half of the broccoli florets. Stir to coat the vegetables in the butter.
- Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat to low and simmer, covered, for 15-20 minutes until vegetables are fork-tender.
- Stir in the remaining fresh broccoli florets and simmer for an additional 5 minutes to preserve the bright color.
- Remove the pot from heat. Use an immersion blender to puree the soup until completely smooth and velvety.
- Stir in the heavy cream and lemon juice, then season with salt and pepper to taste.
