Ingredients:
- 2 cups (180g) rolled oats
- ½ cup (60g) oat flour
- 1 tbsp (12g) baking powder
- ½ tsp (3g) sea salt
- 2 tbsp (28g) melted unsalted butter
- ⅓ cup (80ml) honey
- ¾ cup (180ml) buttermilk
- 2 tbsp (28g) melted butter
- 1 tbsp (21g) honey
Instructions:
- Whisk together the rolled oats, oat flour, baking powder, and salt in a mixing bowl until combined.
- Stir in the melted butter, honey, and buttermilk.
- Mix until a thick, sticky dough forms; stop as soon as no dry streaks of flour remain.
- Heat the skillet over medium heat and add the 2 tbsp of melted butter.
- Scoop approximately 3 tbsp of dough for each bannock, placing them in the pan and flattening them slightly with the back of the spoon into discs.
- Cook for 5–6 minutes per side until deep golden-brown and the honey caramelizes.
- Remove the bannocks from the heat and place them on a cooling rack for 2 minutes.
- While still warm, drizzle the remaining tablespoon of honey over the top for a glossy glaze.
