Ingredients:

  • 2 lbs chicken breast, cut into 1-inch cubes
  • 1/4 cup extra virgin Greek olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 4 cloves garlic, finely minced
  • 2 tbsp dried Greek oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tsp honey

Instructions:

  1. In a large glass bowl or zip-top bag, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, oregano, thyme, smoked paprika, honey, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss until every surface is thoroughly coated.
  3. Cover and refrigerate for at least 30 minutes, though 2 to 4 hours is recommended for optimal flavor penetration.
  4. Thread the marinated chicken onto wooden or metal skewers, leaving slight space between cubes to ensure even airflow and browning.
  5. Preheat a grill or cast-iron grill pan to medium-high heat. Grill the skewers for approximately 10 minutes, turning occasionally, until the exterior is charred and the internal temperature reaches 165°F (74°C).
