Ingredients:
- 2 lbs chicken breast, cut into 1-inch cubes
- 1/4 cup extra virgin Greek olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- 4 cloves garlic, finely minced
- 2 tbsp dried Greek oregano
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 tsp honey
Instructions:
- In a large glass bowl or zip-top bag, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, oregano, thyme, smoked paprika, honey, salt, and pepper.
- Add the chicken cubes to the marinade and toss until every surface is thoroughly coated.
- Cover and refrigerate for at least 30 minutes, though 2 to 4 hours is recommended for optimal flavor penetration.
- Thread the marinated chicken onto wooden or metal skewers, leaving slight space between cubes to ensure even airflow and browning.
- Preheat a grill or cast-iron grill pan to medium-high heat. Grill the skewers for approximately 10 minutes, turning occasionally, until the exterior is charred and the internal temperature reaches 165°F (74°C).
