Ingredients:
- 1 cup (245g) Unsweetened Applesauce
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1/4 cup (60ml) coconut oil, melted
- 1/2 cup (120ml) pure maple syrup
- 1 1/2 cups (190g) all-purpose flour
- 2 cups (180g) old fashioned rolled oats
- 1 tbsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp sea salt
- 3/4 cup (130g) dark chocolate chips
- 1/2 cup (60g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). In a large bowl, whisk together the applesauce, egg, oil, maple syrup, and vanilla vigorously for 60 seconds until the mixture is mahogany-colored and completely smooth.
- Add the flour, oats, cinnamon, baking soda, and salt directly into the wet mixture. Use a spatula to fold the ingredients until no dry streaks of flour remain.
- Fold in the dark chocolate chips and chopped walnuts. Use a 1.5 tablespoon cookie scoop to drop dough onto parchment-lined baking sheets.
- Bake for 12 minutes until the edges are golden and the centers are set. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
