Ingredients:

  • 4 center-cut pork chops (1-inch thick, approx. 170g / 6oz each)
  • 15 ml (1 tbsp) olive oil or avocado oil
  • 10 g (2 tsp) brown sugar
  • 5 g (1 tsp) smoked paprika
  • 5 g (1 tsp) garlic powder
  • 5 g (1 tsp) onion powder
  • 3 g (1/2 tsp) ground black pepper
  • 6 g (1 tsp) kosher salt
  • 1 g (1/4 tsp) cayenne pepper

Instructions:

  1. Pat the pork chops completely dry with paper towels to ensure a crisp crust.
  2. In a small bowl, whisk together the brown sugar, paprika, garlic powder, onion powder, black pepper, kosher salt, and cayenne pepper.
  3. Rub each side of the pork chops with a light coating of oil, then generously apply the seasoning rub, pressing it into the meat.
  4. Preheat the air fryer to 400°F (200°C). Arrange chops in a single layer in the basket, ensuring they do not touch.
  5. Cook for 10–12 minutes, flipping the chops halfway through the cooking time using tongs.
  6. Check the internal temperature; remove the chops when they reach 140°F (60°C).
  7. Transfer the pork to a warm plate and tent loosely with foil. Rest for at least 5 minutes until the internal temperature reaches 145°F (63°C).
