  • 6 oz boxed stuffing mix (savory herb or chicken)
  • 2 large eggs, lightly beaten
  • 1 cup whole milk
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard

Instructions:

  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, whisk together the whole milk and beaten eggs. Fold in the boxed stuffing mix and allow it to sit for 5 minutes to fully hydrate the breadcrumbs and herbs.
  2. Gently crumble the ground beef over the hydrated stuffing mixture. Use your hands to toss the ingredients together until just combined, being careful not to overwork the meat to maintain a light texture.
  3. Line a rimmed baking sheet with parchment paper. Turn the meat mixture onto the center and shape into a free-form 9x5-inch rectangle, avoiding packing the meat too tightly.
  4. In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and yellow mustard to create the glaze. Brush exactly half of the glaze over the top and sides of the loaf.
  5. Bake the meatloaf for 40 minutes. Remove from the oven and spread the remaining glaze over the top for a thick, lacquered finish.
  6. Return to the oven and bake for an additional 10-15 minutes, or until an instant-read thermometer inserted into the center reaches an internal temperature of 160°F (71°C).
