Ingredients:

  • 1.5 cups (170g) shredded low-moisture mozzarella cheese
  • 0.75 cup (84g) super-fine blanched almond flour
  • 2 tbsp (30g) full-fat cream cheese
  • 1.5 tsp (9g) garlic powder

Instructions:

  1. Preheat your oven to 400°F (200°C). Combine the shredded mozzarella and cream cheese in a microwave-safe glass bowl.
  2. Heat in 30-second intervals, stirring in between, until the mixture is completely melted, glossy, and uniform.
  3. Quickly fold the almond flour and garlic powder into the molten cheese mixture. Use a spatula to press the flour into the cheese until a ball forms.
  4. Knead the dough with your hands for 30 seconds until it reaches a soft, playdough-like consistency. If it becomes too stiff, reheat for 10 seconds.
  5. Place the dough between two sheets of parchment paper and roll it into a rectangle approximately 1/4 inch thick. Remove the top sheet of parchment.
  6. Transfer the bottom parchment with the dough to a baking tray and bake for 12 minutes or until the edges are golden-brown and the surface is bubbly.
