Ingredients:

  • 1 box (15.25 oz) Yellow Cake Mix
  • 3 Large Overripe Bananas, mashed (approx. 340g)
  • 2 Large Eggs

Instructions:

  1. Peel the bananas and place them in a large mixing bowl.
  2. Use a fork or potato masher to mash them until they reach a thick, chunky liquid consistency with small pea sized lumps remaining for texture.
  3. Add the two eggs to the mashed bananas and whisk with a fork until the yolks are fully incorporated.
  4. Slowly pour in the yellow cake mix. Note: Adding it in two batches makes it easier to incorporate without making a mess.
  5. Use a silicone spatula to fold the dry mix into the wet ingredients.
  6. Stop folding as soon as no dry white streaks remain to avoid over mixing.
  7. Pour the batter into a greased or parchment lined 9x5 inch loaf pan and smooth the top with a spatula.
  8. Bake at 350°F (175°C) for 45 to 50 minutes.
  9. Test for doneness by inserting a toothpick into the center; it should come out with just a few moist crumbs attached.
  10. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.
